Why and how does the plant produce aloe vera gel?
What is the purpose served by producing aloe vera gel in the leaves of the aloe vera plant?
And how is it produced by the plant itself?

The plant derives benefits from the particular form its sap (you call it gel) takes such as increased pest and disease resistance. The aloe vera gel is the plant’s sap and the fact that it has beneficial effects for humans is coincidence. (QUOTE from site: These positive effects are thought to be due to the presence of compounds such as polysaccharides, mannans, anthraquinones, and lectins.[3][5][6]) Saps that are gel like are not uncommon in succulent plants. The plant’s genes code for the gel like sap that it produces as a result of making sugars to store for food and making chemicals to protect the plant.

Let them dry out a little more than you normally would between waterings. This will prompt their roots to seek out more water, and that is the first step in producing offsets.
